Bikini Recipe

Makes enough for 10 people

To make the Clementine Cordial (makes 750ml)

300ml recently pressed clementine juice
200ml recently pressed lemon juice
500g fine sugar

Ingredients for the Premix (yields 850ml, serving 10)

400ml premium vodka
100ml classic gin
150ml peach-flavored liqueur
200ml citrus syrup (as made above)
Whole cranberries, for garnish
Mandarin essential oil, as a final touch

Instructions

For the Citrus Syrup: Put all the items inside a saucepan, heat until it reaches a simmer, mixing until the sugar dissolves. Then, take off the burner and leave to cool entirely. Pour to a sealable bottle, cap it keeping it in the refrigerator, it can be stored for up to one month.

To make Premix: Mix all the liquid ingredients in a sizeable container, let it rest for an hour, then filter it best through a fine cloth, so it's fully clarified.

For serving: Add 85ml from the cocktail base into your cocktail shaker filled with ice, and stir carefully for one minute until cold. Filter into a cold coupe glass or equivalent, top with some cranberries adding the final touch by giving it a quick spritz of the essential oil over the drink.
